Gutting and Gouging Skewers are Fighter Weapon Skills you can unlock in Dragon’s Dogma 2.

How to unlock Gouging Skewer in DD2
You will be able to unlock the Gouging Skewer skill once you reach Rank 4 of the Fighter Vocation, and just like the Gutting Skewer, you will be able to purchase this from the Vocation Guild itself for 700 Discipline Points, which you can earn by defeating enemies with the Fighter Vocation Equipped. This is the base version of the Gutting Skewer Skill.
What does it do?
With the Gouging Skewer Skill, you can thrust the blade into your enemy’s body before raining further attacks on them. If your blow connects appropriately, you can cling to the larger target to pin down the smaller targets currently flinching in DD2.
How to unlock Gutting Skewer in DD2
If you are on the Fighter Vocation, you can unlock this Skewer Skill upon reaching the Rank 7. Purchase it from the Vocation Guild. Remember that you would need at least 2000 Discipline Points or DCP, and getting it from defeating enemies is your best option. This is the advanced form of this fighter skill.
What does it do?
As this is an advanced form of the Gouging Skewer skill, it increases the stabbing blow on your enemies, and you can deploy this attack midair as well.
